My Experience with my Box
From my experience guys, I had no idea how large this box was and how packed this box was with produce. Even better, your food comes in brown paper bags which are super eco-friendly and keep your produce freshly organized.
The idea of having an abundance of various types of produce allow you to eat and change up your meals over and over again. It keeps you on your toes and even better gets you creative with your meals. You can pinterest or google certain recipes like “zucchini recipes” or “potato recipes” if you are not sure what to make. Trust me the stuff you can find is beyond amazing! The produce at your door step makes it also 100 times better to create as you don’t have to shop and think about what you need to buy and what you are going to make. Very time efficient!

Was the Produce that “Ugly”?
Personally, I did not find these foods that “ugly”. They were beautiful and were totally “naturally imperfect”. Some of the produce I’d even choose in a store if I found them or even if I found them on the clearance rack. This to me shows that the produce is very natural.

I made my favourite Zucchini Noodle Tomato Sauce Pasta Recipe!

Ingredients for veggie pasta:
- 4 medium sized zucchini
- 5 medium and large carrots
- 1 large beet
Ingredients for the homemade tomato sauce:
- 1 tsp olive oil
- 1/3 cup water
- 2 small onions, finely chopped
- 1 medium potato
- 8 tomatoes, finely chopped
- 1 eggplant, diced finely
- 4 small red/orange/green peppers
- 1.5 cup organic tomato paste
- 1/3 cup chopped parsley
- 2 garlic cloves, finely chopped
- pinch of salt
- pinch of black pepper
- pinch of cumin
- 1.5 tsp dried oregano flakes
- 1.5 tsp dried basil flakes
To make the pasta:
- Spiralize the zucchini, beets, and carrots using a spiralizer. Make them any length you desire.
- Optional: you may choose to cook your noodles or keep them raw. To cook: place into a pot of boiling water for 3-4 minutes. Strain your noodles and place into a bowl.
To make the sauce:
- Over medium heat, place olive oil, garlic, potatoes and onions into a pan. Sauté for 2-3 minutes.
- Place the peppers, tomatoes, eggplant, and parsley into the pan. Sauté for 2-3 minutes. Add water and stir. Let simmer for 2 minutes. Add all the seasoning and spices from the ingredient list and of your choice. Stir the ingredients all together.
- Lastly add the tomato paste into the pan. Stir it in with all the other ingredients. Cover the pan with a lid. Lower the heat to minimum and let simmer for about 8-10 minutes.
- You may begin to plate your veggie pasta onto plates. Pour the tomato sauce onto the pasta (about 1/2 cup). Garnish with fresh parsley, cilantro, nuts/seeds (cashews or sunflower seeds), and/or fresh diced tomato.
