Simple & Easy Vegan Buddha Bowl – Sprouted Tofu + Green Herbs

Buddha bowls have been lately getting so much attention!

They are filled with tons of fresh natural ingredients and just simply are so colourful, like eating a rainbow #eattherainbow. Not to mention, they are usually filled with lots of healthy ingredients and can be so nutritious.

When I have lots of various greens at home, I opt for making large salad bowls that usually turn into delicious buddha bowls!

What’s in my bowl ??😋

A simple bowl filled with lots of my favourite greens and herbs, vegan protein aka  sprouted tofu and lots of healthy fats!

Build your own bowl…
Base:

  • lots of green lettuce
  • chopped fresh parsley
  • chopped fresh fenugreek
  • cauliflower rice

To make your own Cauliflower Rice: purchase a cauliflower head. Cut into small florets. Place into a food processor. Process for about 2 minutes, or until the consistency has turned into rice. Optional: You may boil your cauliflower rice for 3 minutes to soften! Be careful for it not to over bowl, unless you want mashed cauliflower. Still is very delcious like mash potatoes.

Toppings:

  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 block sprouted firm tofu, cubed and marinated (to marinate your tofu: rinse the tofu and let sit in luke warm water for about 10 minutes. Rinse and drain. In a cup place 1/3 cup balsamic vinegar, 2 tbsp extra virgin olive oil and 2 tbsp organic mustard (make sure all ingredients in the mustard are pure!Mix together and massage into the diced tofu. Let marinate for at least 15 minutes. The longer the better.)
  •   1/2 large avocado, diced or sliced

 

  • Sprinkled some dried oregano, paprika, basil and @traderjoes everything seasoning (black and white sesame seeds with salt). Also, added some @bragglivefoodproducts ACV, olive oil, and coconut cream for the dressing!

Why I add Herbs to my Bowl?

Adding fresh parsley and fenugreek,  adds a lot of real natural flavour to your salad! It makes it taste so fresh  and adds so much beneficial nutrients to your bowl and aids in your body immune detox.

Health Benefits:

Fenugreek: when eating raw, helps with heartburn, keeping cholesterol levels in check, lowering blood sugar, boosting testosterone, and helping with appetite control.

Parsley: when eating raw or juicing, it helps to detox, help build the immune system and helps with inflammation within the body, amazing for kidney filtration and really good for the skin. High in Vitamin C!

These #buddhabowls make an awesome lunch or dinner, especially when you are short on time. Simple, delicious and really easy to make! 🥗

Who’s up for some healthy sweets + coffee ☕️ w/ @sweetharkitchen ?!
Last week, I stopped by @sweethartkitchen to pick up some Fall treats that got me into the Autumn mood. Their pumpkin spice donut stole my heart 🍂 🍩

If you know me, I don’t usually go for processed desserts. I grew up in a household where desserts were always homemade and always made from less then 10 whole natural ingredients. Today, we walk down aisles at grocery stores to buy cake mixes in a box that are made out of non-pronounceable ingredients and you can only find goodies at the bakery section that last weeks in their current state without spoiling. This makes me question so many things. 
That’s when I alert myself and ask, do I want to put this into my body? My body is my home and should be treated with respect. 
Finding healthy treats can be a little difficult but it will benefit you later. You will feel fuelled instead of a sugar rush. Eating healthy doesn’t have to be hard at all. And so many people complain and blind themselves from options. ✖️Finding @sweethartkitchen that offers healthy treats that are gluten-free and vegan make it 100x easier and better! 
I challenge you this weekend to treat yourself with of course a “healthy” dessert 🧁. Wishing you all a very happy Friday and weekend!

Fall is my favourite time of year for outdoor activities 🍂 While summer is super fun and lively, it can get a bit sweaty and overwhelming at times. ☀️ Especially up here in Canada, the nature around us transforms into a palette explosion of colour. 
You can visit a pumpkin patch, go for hikes in the forest, bake the most incredible recipes, and of course decorate the house with cute little gourds. 🎃 
I’m curious, what’s your favourite season? I’m not a fan of the cold, but I can’t help but love the pretty fall vibes🍁

1 c full fat coconut milk @wholefoodsont 
1 c nut milk of your choice @silk almond milk
1/2 c @everlandfoods chia seeds
1 tsp @everlandfoods vanilla extract
1 scoop protein powder, @leanfitbrand completegreen protein powder 
2 tsp cocoa powder, @bulkbarnfoods 
2 tsp pumpkin spice, @traderjoes 
1 tsp maple syrup
