Salmon Devilish Eggs

Salmon Devilish Eggs

This makes the perfect appetizer dish to serve right at your home or bring to a pot luck.

With Valentine’s Day around the corner, I’m sure you’ll have your loved ones over. Instead of making just regular eggs make these Salmon Devilish Eggs to add to your menu. The spread is naturally dyed with Beets for their cute pink colour. It is super easy to make!

I’ve got the chance to use CHOSEN FOODS Mayonnaise from Avocado Oil that is Non-GMO, dairy-free, paleo and gluten-free!

These Salmon Devilish Eggs put a spin on regular devilish eggs and are truly delicious and healthy that keep you fuelled throughout the day!

Salmon Devilish Eggs

Prep Time: 30M Cooking Time: 10M

Ingredients

  • 8 eggs
  • 1 can of wild caught salmon (boneless)
  • 1/4 cup avocado oil mayonnaise by Chosen Foods
  • 1 small onion, chopped
  • 1 small garlic
  • 2 1/2" sliced medium beets (raw or cooked)
  • dash of pink salt
  • dash of pepper
  • optional: pine nuts for topping or parsley/cilantro

Instructions

  1. In a medium sized pot, boil water and add eggs to the pot to boil. Takes about 8-10 minutes. 
  2. Let the eggs cool or place them in cold water. 
  3. Peel the eggs and slice in half, long way. Gently scoop the yolk and place into a separate bowl. 
  4. In a food processor, begin to add the yolks, salmon, avocado mayonnaise, beets, onions and garlic. Feel free to add any spices of your likings to the spread. Blend/ Pulse the ingredients together until a spread like texture is present. 
  5. Use a spoon to scoop the spread into the egg whites carefully. 
  6. Spirinkle some salt and pepper onto the devilish eggs. You may choose to add a variety of toppings like nuts ( pine nuts, almond slices) and/or chopped parsley and cilantro. 
  7. Serve and enjoy!

Notes

Storage: Keep in the refrigerator and covered preferably. Lasts up to 7 days!
